I'm close to rewiring my Strat. Was wondering if there is a way to test pots before buttoning the whole thing up. Once that pick-guard is "done"...buttoning up the whole project and restringing the guitar...seems like a lot to go through to find out that something was wrong...Any tips? Thanks.

Whenever I'm testing electronics to see if they work, I'll put just one old string on and try it out. On a strat it can be even easier, just plug the uninstalled pickguard assembly into an amp and hold the pickups near the strings on any other guitar.
