I have an Epiphone Sheraton that I love to death. It's beautiful and plays like a dream but recently I'm not too happy with its output. Played through my Super Reverb, it just doesn't have as much growl and grit as I would like. I'm thinking of changing one or both of its pickups to something with a bit more output. I've been reading about the Seymour Duncan Pearly Gates which sound cool, but come with a hefty price tag. I have absolutely 0 experience with this kind of stuff.

Any suggestions/advice?

Get a new guitar.

Keep the old one and get a new one ....
Dont ruin what you love in the Epi.
Dont know how easy it is or isnt to swap out pups on a Epi like that.Strats are made to tinker with ....
I did to my Strat what you want to do ...
I have Pearly Gates in my bridge position.Its louder and grittier than what I replaced.
Its cool.Dont know if it blends with the Strats other pups that great ..

I use a Bluesdriver pedal for some grit.
With the Pearly Gates its real gritty but when I switch to the neck or middle positions it gets real clean sounding - so the Pearly Gates really works some Mojo ..
Save some extra bread and get another guitar ....
