lol this sure is a difficult question. he's played so many different sounding solos it kind of depends what you're looking for

one of my favorites is 30 years ago today, 10/29/77's Looks Like Rain. I just love Jerry's playing on it. The solos kick ass and the lead playing fits just perfectly with the vocals as the song climaxes.

i always thought jerry's guitar work in LLR was sublime, and he would just come out of nowhere with these beautiful piercing notes, whereas the song is pretty mellow most of the way through and then he just shines on the climax.

gotta love when bob builds up the instrumental in Easy Wind and Jerry is pumping it up with those fat 7th chords while bob does his interesting little solo, and then he just rips a wormhole.

also, love those solos when Garcia just keeps going up and up and you're just thinking man how many crescendos in a row can this guy rip??? now that i think of it, thats why JG is my fave. lots of good guitarists out there, but nobody i love hearing WAIL more than jerry.

but yeah, for me, its more like put on a show, and find a gem in every one... can't keep track of every solo jerry ever played...

ohhhhh yea, when jerry does that "up and up and up etc" thing you mention, it makes me feel like my head is gonna pop off if he doesnt stop soon, pretty much every time i hear stuff like that (Other One from DP 18 comes to mind) right when he peaks i always get a huge smile, and then i feel like i need a cig after

the one from that show is sweet, as is the playin' (talkin' bout a great jerry solo), tight rendition of terrapin, but i digress. (its also from the GD only run in Alaska)

the question posed is really hard to answer because on many songs that feature jerry's most brilliant work the whole band is soloing at once... of course lead guitar is prominent, but would not have the nearly the same effect without the lush support the band provides.
