I have a Gibson SG Faded with duel open coil pickups and I want to put the Gibson Pickup Covers on them so the guitar looks more like Jerry's SG, but I don't know: First if the Covers will even fit and Second if I'll have to do any sodering. Have any of you guys ever done this? Thanks.

As far as I can tell you would need to solder the covers to ground, whether it be the PU plate or seperate wire.
The covers should fit the pickguard, w/o mod, if that is your Question.
