Very Nice Bro! Your stuffed shells w/ eggplant made me drool. I cooked for 14 years all over the place. Nothing beats homestlye, family cooking-nothing! Anything with eggplant and ricotta makes me food-crazy.
Most of us up here in Buffalo say: Ric-ahh-ta.

My grandma said "rigote".
Go for an over the top episode-let's see some Braciole.
