the weight - a la Mike Bloomfield/Al kooper super sessions. they do a nice instrumental version of this.

sunshine of your love - very recognizable song that could be done instrumentally

little wing - hendrix

For dead tunes, I would recommend you take a look at Jazz is Dead, particularly their "laughing water" album. They play some really good instrumental versions of dead songs. Some good ones that they do are:

Row Jimmy, WRS, let me sing your blues away, and eyes of the world.

Booker T and the MG's have some good instrumentals,
The Meters also have some good ones...
Look-Ka Py Py and Cissy Strut come to mind.
