Another really nice finish is Tru Oil gunstock oil. I have a neck Im gonna do with it, but Ive seen enire guitars done with it and it looks great.
Basically you just rub it on with your fingers in thin coats over several days until you get a built up hard natural finish.

Just wanted to clarify that I did not use Tru Oil. That stuff is ok for guns, but guitars have a higher purpose, and should be finished accordingly. Check out Milobender's build thread, here:
